Roti John (Beef Version) (Malaysian Egg & Minced Beef Omelette Sandwich)
Ingredients
– 1 baguette, sliced in half – 200g minced beef – 3 eggs – 1 small onion, finely chopped – 1 green chili, chopped (optional) – 1 tsp curry powder – ½ tsp salt – ½ tsp black pepper – 1 tbsp oil or butter – 1 tbsp mayonnaise – 1 tbsp chili sauce or ketchup
Instructions
1. In a bowl, mix minced beef, eggs, chopped onions, green chili, curry powder, salt, and black pepper. Stir well. 2. Heat a pan over medium heat and add 1 tbsp oil. 3. Pour half of the egg mixture into the pan, spreading it evenly. 4. Press one half of the baguette onto the omelette while it is still runny so it sticks. 5. Cook for about 3-4 minutes, pressing lightly until the omelette is set and golden brown. 6. Flip the bread and omelette together and toast the other side until crispy. 7. Remove from the pan and repeat with the other half of the bread. 8. Spread mayonnaise and chili sauce on top before serving. 9. Serve hot with extra sauce on the side.
