Ingredients
- 200g halloumi cheese, sliced
- 1 small zucchini, sliced
- 1 bell pepper, sliced
- ½ red onion, thinly sliced
- 1 small tomato, sliced
- 2 pita breads or wraps
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp dried oregano
- ½ tsp black pepper
- ½ tsp salt
- 2 tbsp hummus or tzatziki (optional)
Instructions
- Heat a grill pan or non-stick skillet over medium heat. Lightly brush the halloumi slices with olive oil and grill for about 2 minutes on each side until golden brown. Remove and set aside.
- In the same pan, grill the zucchini and bell pepper slices for 3-4 minutes until tender. Season with a pinch of salt and oregano.
- Warm the pita bread in a dry pan or microwave for a few seconds to make it soft.
- Spread a layer of hummus or tzatziki on the pita (optional).
- Layer the grilled halloumi, zucchini, bell pepper, red onion, and tomato slices inside the pita.
- Drizzle with lemon juice and a sprinkle of black pepper.
- Fold the wrap or pita and serve immediately. Enjoy your delicious Mediterranean sandwich!
