Grilled Tandoori Chicken Sandwich (Indian Spiced Chicken Sandwich)

Ingredients

– 2 boneless chicken breasts – ½ cup Greek yogurt – 1 tbsp lemon juice – 1 tsp ginger-garlic paste – 1 tsp garam masala – 1 tsp paprika – ½ tsp turmeric – ½ tsp cumin powder – ½ tsp red chili powder – ½ tsp salt – 1 tbsp oil – 2 sandwich buns or bread slices – ¼ cup mayonnaise or yogurt – 1 tbsp chopped cilantro – ½ cup lettuce leaves – 1 small tomato, sliced – ¼ red onion, sliced – 1 tbsp butter (for toasting)

Instructions

1. In a bowl, mix yogurt, lemon juice, ginger-garlic paste, and all the spices. Add the chicken breasts and coat them well. Cover and marinate for at least 1 hour (overnight for best flavor).

2. Heat a grill or pan over medium heat. Brush with oil and grill the marinated chicken for about 6-7 minutes per side until fully cooked. Let it rest before slicing.

3. Mix mayonnaise or yogurt with chopped cilantro to make a simple sauce.

4. Toast the sandwich buns with butter in a pan until golden brown.

5. Spread the sauce on both halves of the bread. Add lettuce, sliced tomatoes, onions, and the grilled tandoori chicken.

6. Close the sandwich and press lightly and serve warm with extra sauce or chutney on the side.
