Ingredients
For Falafel: 1 ½ cups dried chickpeas (soaked overnight), ½ onion (chopped), 3 cloves garlic, ½ cup parsley, ½ cup cilantro, 1 tsp cumin, 1 tsp coriander, ½ tsp salt, ½ tsp baking soda, 2 tbsp flour, Oil for frying.
For the Sandwich: 4 pita breads, 1 cup lettuce (shredded), ½ cup tomatoes (chopped), ½ cup cucumbers (sliced), ¼ cup pickles (optional), ½ cup tahini sauce.
Instructions
1. Prepare Falafel Mix: Drain soaked chickpeas and add to a food processor. Blend with onion, garlic, parsley, cilantro, cumin, coriander, salt, and baking soda until coarse.
2. Form the Falafel Balls: Transfer mixture to a bowl, add flour, and mix. Shape into small balls or patties. Let them rest for 10 minutes.
3. Fry the Falafel: Heat oil in a deep pan to 350°F (175°C). Fry falafel in batches for 3-4 minutes until golden brown. Drain on paper towels.
4. Prepare Pita Bread: Warm the pita on a dry skillet or in the oven.
5. Assemble the Sandwich: Slice open the pita and layer with lettuce, tomatoes, cucumbers, and pickles. Add crispy falafel balls.
6. Drizzle with Sauce: Generously drizzle tahini sauce over the filling.
7. Serve and Enjoy: Fold the pita and enjoy your homemade falafel sandwich!
