Khao Jee Pâté (Lao Baguette Sandwich with Chicken or Egg)
Ingredients
– 1 fresh baguette – 2 tbsp chicken liver pâté – 2 tbsp mayonnaise – 1 grilled chicken breast (or 2 scrambled eggs) – ½ cup pickled carrots and daikon – ½ cucumber, thinly sliced – 2 tbsp fresh cilantro – 1 tbsp soy sauce – 1 tsp chili sauce (optional) – ½ tsp black pepper – 1 tsp butter
Instructions
1. Slice the baguette in half lengthwise and lightly toast it until crispy. Spread butter on the inside while warm. 2. Evenly spread chicken liver pâté on one side of the bread and mayonnaise on the other. 3. If using chicken, grill or pan-sear the chicken breast with soy sauce and black pepper, then slice thinly. If using eggs, scramble them with a little salt and pepper. 4. Place the cooked chicken or eggs onto the baguette, layering it evenly. 5. Add pickled carrots and daikon, cucumber slices, and fresh cilantro on top. 6. Drizzle with chili sauce for extra spice. 7. Close the sandwich and gently press to keep the ingredients together. 8.
