Vada Pav (Indian Spiced Potato Burger)
Ingredients
For the Potato Filling:
– 3 large potatoes (boiled and mashed)
– 2 green chilies (finely chopped)
– 1 tsp mustard seeds
– 1 tsp turmeric powder
– 1 tsp ginger-garlic paste
– 1 tbsp chopped coriander leaves
– 1 tbsp lemon juice
– Salt to taste
For the Batter:
– 1 cup gram flour (besan)
– 1/2 tsp turmeric powder
– 1/2 tsp red chili powder
– Salt to taste
– Water (as needed)
For Assembling:
– 4 pav buns
– Green chutney, tamarind chutney
– Fried green chilies (optional)
– Butter for toasting
Instructions
1. Prepare the potato filling: Heat 1 tbsp oil in a pan, add mustard seeds. Once they splutter, add green chilies, ginger-garlic paste, and turmeric powder. Sauté for a minute, then add mashed potatoes, salt, lemon juice, and coriander. Mix well and let it cool. Shape into small round patties.
2. Prepare the batter: In a bowl, mix gram flour, turmeric, red chili powder, salt, and enough water to make a thick batter.
3. Fry the vadas: Heat oil in a deep pan. Dip each potato patty in the batter, coat well, and deep-fry until golden brown and crispy. Drain on paper towels.
4. Toast the pav: Cut the pav buns in half and lightly toast them with butter on a pan.
5. Assemble the Vada Pav: Spread green chutney on one side of the pav and tamarind chutney on the other. Place a hot vada inside and press gently. Serve with fried green chilies.
