Bánh Mì Gà (Vietnamese Chicken Baguette Sandwich)

Ingredients

For the Chicken:
2 boneless chicken breasts
2 tbsp soy sauce
1 tbsp fish sauce
1 clove garlic, minced
1 tsp sugar
1 tbsp vegetable oil

For the Pickled Vegetables:
½ cup julienned carrots
½ cup julienned daikon radish
¼ cup vinegar
1 tbsp sugar
½ tsp salt

For the Sandwich:
2 Vietnamese baguettes
¼ cup mayonnaise
1 cucumber, thinly sliced
¼ cup fresh cilantro
1 jalapeño, thinly sliced (optional)

Instructions

1. Marinate the Chicken: In a bowl, mix soy sauce, fish sauce, minced garlic, sugar, and oil. Coat the chicken in the marinade and let it sit for 15 minutes.

2. Prepare the Pickled Vegetables: In another bowl, mix vinegar, sugar, and salt. Add the carrots and daikon, toss well, and let them sit for 15 minutes.

3. Cook the Chicken: Heat a pan over medium heat. Cook the marinated chicken for about 5-7 minutes per side until fully cooked. Let it rest for 5 minutes before slicing.

4. Assemble the Sandwich: Slice the baguette open and spread mayonnaise on both sides. Layer with cucumber slices, cooked chicken, pickled vegetables, cilantro, and jalapeño slices.

5. Serve: Close the sandwich, press lightly, and serve fresh with extra chili sauce if desired.
