Sabich (Israeli Fried Eggplant & Egg Pita)

Ingredients

For the Sandwich: 2 large eggplants (sliced), 4 eggs (hard-boiled and sliced), 4 pita breads, 1 cup lettuce (shredded), ½ cup cucumbers (chopped), ½ cup tomatoes (chopped), ¼ cup onions (thinly sliced), ¼ cup pickles (sliced).

For the Tahini Sauce: ½ cup tahini, Juice of 1 lemon, 1 clove garlic (minced), ¼ cup water, ½ tsp salt. For Frying: ½ cup vegetable oil, ½ tsp salt, ½ tsp black pepper.

Instructions

1. Prepare the Eggplant: Slice eggplants into ½-inch rounds, sprinkle with salt, and let sit for 10 minutes to remove excess moisture. Pat dry. 2. Fry the Eggplant: Heat vegetable oil in a pan over medium heat. Fry the eggplant slices until golden brown on both sides (about 3-4 minutes per side). Place on paper towels to drain excess oil. 3. Boil the Eggs: In a pot, boil eggs for 10 minutes, then transfer to cold water. Peel and slice them. 4. Make the Tahini Sauce: Mix tahini, lemon juice, garlic, salt, and water until smooth. Adjust thickness by adding more water if needed. 5. Assemble the Sabich: Warm the pita bread. Spread tahini sauce inside, then layer fried eggplant, sliced eggs, lettuce, cucumbers, tomatoes, onions, and pickles. 6. Serve: Drizzle with extra tahini sauce or amba sauce for a tangy kick.
